Easy Fruit Cobbler Recipe:
Who has time for dessert? You do! If you are lucky enough to live near a Farmers Market, local farm stand, or a “pick your own” field, purchase your fruit there. You will probably find that it is the same price (or less) and better quality than at the grocery store.
Ingredients
- 1 cup self rising flour
- 1 cup sugar
- 1 cup milk
- 1 tsp vanilla
- 3 cups fruit (berries can be left whole; slice peaches, apples or strawberries)
- 1 stick butter
Instructions
- Preheat oven to 375.
- Place a stick of butter in a 2 quart casserole dish to melt in the oven while preheating.
- Mix first four ingredients together in bowl.
- Slice freshly peeled peaches (see below for a trick!) or the fruit of your choice and place in the bottom of the casserole dish after butter has melted.
- Pour mixture over fruit and bake for 45 minutes or until cobbler is golden brown.
Make peeling peaches a snap with this trick!
Cut a shallow X in the bottom of the peach. Place the peach in boiling water for 2 minutes and then place in ice water for 5 minutes. The peel should come off easily. This also works when peeling tomatoes.

As I read it, I wondered if you all are doing anything to curb (cut down) your use of butter as the price is going through the roof.
We have found good substitutes for butter in baking some items but what do you do if you “have to have” butter to spread on say pancakes?

I do not have any good substitutes for butter but you can try to stock up and freeze it when you find a good sale and have coupons.
