It isn’t always easy to get kids (or some adults) to eat fish but I have a quick, easy, inexpensive and yummy tuna casserole that is guaranteed to please everyone at the table.
Ingredients
- 1 cup macaroni noodles or penne pasta - whatever you have on hand ($.25)
- 1 can tuna in water (drained) ($.75)
- 1 cup shredded cheddar cheese ($.75)
- 1 tub of Philadelphia Cooking Creme (I use the original flavor but my sister-in-law uses the garlic and herb flavor. Both are equally delicious.) ($1.25)
- 1 1/2 cups of french fried onions (separated) ($.75)
- Salt and Pepper to taste
Instructions
- Boil macaroni or penne pasta. I like to leave mine with just a little bite or al dente.
- While preparing pasta mix all other ingredients together leaving out 1 cup of french fried onions to top casserole.
- Drain pasta and add to mixture.
- Place in 2-quart casserole dish.
- Cook for 20 minutes at 350.
- Top with remaining french fried onions and bake for 5 more minutes.
- This makes 4 large servings.
- Complete your meal with steamed veggies.
This casserole can be made a day or two in advance, stored in the refrigerator and baked for a quick dinner. I also like to make 4 individual ramekins of this casserole and place them in the freezer so that I can heat it up for a quick lunch or dinner when I am by myself. Just let it thaw for 2-3 hours in the refrigerator before you place it in the oven.
The total cost of this meal including fresh steamed veggies (broccoli and carrots) was around $7 for me. I only buy the Cooking Cream when it is on sale and most of the time I have a coupon for it as well. I also take advantage of deals on shredded cheese (BOGOF or 2/$3) because these can be frozen.
On your next grocery trip take advantage of great deals and grab one or two more of the things that you know you will need over the next month or so while they are on sale. While you may spend a few dollars more than you had budgeted for the week, think how great it is to have the things you need in your kitchen instead of HAVING to rush out and buy them and pay a premium price!
