I made this Ricotta and Pasta Casserole the other night and as you can see by the empty dish it was a big hit in my house! This cost me around $4 to make. I stockpile my mozzarella, ricotta and pasta when it goes on sale.
Ricotta And Pasta Casserole
Ingredients
- 8 ounces of pasta
- 2 tablespoons of oil
- 1/2 onion (chopped)
- 2 teaspoon garlic (chopped)
- 6 ounces fresh spinach (washed and chopped)
- 2 tablespoons of flour
- 3/4 cup milk
- 3/4 cup mozzarella cheese
- 3/4 cup ricotta cheese
- 1/2 cup parmesan cheese
- 1 teaspoon sugar
- salt and pepper to taste
Instructions
- Preheat oven to 350 degrees
- Prepare pasta and drain
- Heat oil and saute onions and garlic
- Add spinach and cook until wilted
- Add flour and stir
- Add milk and stir (cook for a few minutes to thicken)
- Remove from heat and add pasta, mozzarella, ricotta, salt, pepper and sugar and put in dish
- Top with parmesan cheese
- Cook for 15 minutes
