Here is our menu for the coming week – we have to cross our fingers that I get all the baking done Mon and Tue (WW bread, pita bread, granola, cinnamon graham squares and oat/flax squares – whew!) since our weekend was so busy with Easter celebrations!
This is for our family of 4 (includes a 9 month old and a toddler)
Monday
B: Banana frittata (w/ ww flour and no oil/butter!)
L: Veggie and noodle casserole (like tuna but without it!)
D: bacon mushroom chicken
Tuesday
B: cereal
L: PB & Honey sandwhiches, crackers
D: leftovers from late last week and the weekend
Wednesday
B: cinnamon raisin oatmeal
L: pita (and more pita) & hummus, cottage cheese and apple slices
D: meatloaf and steamed veggies
Thursday
B: cereal
L: PB & honey, crackers
D: shrimp and salmon, fruit salsa and wild rice pilaf
Friday
B: eggs, toast
L: veggie casserole
D: steaks on the grill, corn on the cob, salad
Saturday
B: whole wheat pancakes, eggs
L: pita & hummus, cottage cheese, apples
D: leftovers
Sunday
B: egg frittata
D: chicken pot pie and bread
Snacks: yogurt, fruit, granola, cinnamon squares, chocolate otameal flax bars, bananas
