This week I’m trying several new recipes…maybe a bad thing???
Monday
B: eggs, apple cinnamon muffin
L: BBQ Chicken
D: Moussaka
*update on the Moussaka…it had a good flavor but did NOT set up well. I only used 2 of the 4 cups of milk and I had two large eggplant vs three but I really can’t figure out what I did wrong! Anyone have a good moussaka recipe or some advice? I’d like to try again!
Tuesday
B: cereal
L: turkey wrap/apple slices
D: Italian Summer Squash Polenta Bake
*I loved the polenta bake…everyone else was so-so about it. The sauce was great and I did it with just some garlic and tomatoes (vs the spaghetti sauce called for in the recipe).
Wednesday
B: Waffles, fruit and yogurt
L: beans over cornbread
D: creamy herbed pork chops (from my BH&G cookbook), brown rice
*We also made fresh artichokes with butter sauce tonight…not our cup of tea! My son loved them, which is wierd – he’s only 2-1/2. We will not be buying those again!
Thursday
B: cereal
L: turkey wrap/homemade potato chips (see “baking” below)
D: baked potatoes with all the fixin’s
*I tried to make the potato chips ahead so they’d be crisy and dry by lunch Thursday. Evan and I liked them but my food processor doesn’t slice them thin enough or uniformly so I think we’ll have to nix this one too…until I snag a nicer food processor.
Friday
B: eggs/muffin
L: mac and cheese/cornbread
D: dinner at grandma’s!
Saturday
B: waffles
L: leftovers
D: Ratatouille with rice (minus the eggplant!)
Sunday
B: OYO
S: grill out hamburgers, chicken legs and corn on the cob (we’re having family over for dinner)
Snacks: Strawberry shortcake (we picked up strawberries for $1 a pound at Wal-Mart this week!), gluten-free cinnamon graham squares (you can make this with whole wheat pastry flour), homemade applesauce
Baking: gluten-free cornbread, homemade potato chips, gluten-free tortillas (I’m using Bob’s Red Mill GF Flour in place of WW flour here), whole wheat bread for me and hubby
