My son is gluten free…we are always looking for treats to make at home that are yummy and special to him but still safe to eat!
My favorite book held yet another fabulous recipe I just tried this week. Dr Sears’ The Healthiest Kid in the Neighborhood (one of our “Centsable Reading” Books)…go to your library and check it out…you’ll want to buy a copy to have on hand for reference!
I want to share the recipe because it is easy-easy!
Peanut Butter Protein Balls
This recipe calls for chocolate protein powder which you should be able to find at any local grocer who stocks health food. We have two near us that carry it – at about $15 a can it’s a little pricey but worth it I think!
Makes 3 dzn
1/2 c honey (or less to taste)
2/3 c non-hydrogenated, natural peanut butter (We love Skippy All Natural – it’s just like regular PB I promise!)
1 c chocolate flavored protein powder
3.5 c crisy rice cereal (I use Barbara’s GF but you can buy store brand Crispy Rice or Kellogg’s Rice Krisipies)
Optional
diced raisins, dates, chocolate or carob chips
Directions:
Mix honey, PB and protein powder together in a LARGE mixing bowl. Mixture will be very think and stiff – I microwave it for 15-20 seconds to soften after I’ve mixed it. Add cereal a cup at a time and stir gently. Shape into balls and place on wax paper on a cookie sheet or in a Tupperware container. Place in freezer or refrigerator for a couple of hours. Store in container or plastic bag in freezer. Let stand fora minute or two before eating.
They took me about 15 mins to make this evening and my son and husband LOVE them! They are healthy – only sweetener is honey and I can feel good that they are getting some extra protein. You could easily add a little flaxseed to the mixture as well – just adjust the dry ingredients to compensate.
