Today I was going through the refrigerator and found an entire bowl full of raspberries, blackberries and blueberries that were going to have to go in the garbage if we didn’t eat them today!
There was too much to even consider eating all at once and if you know how expensive berries can be (and how hard and long I looked for a great deal before even purchasing these!) you’ll understand why I was desparate to make the most of them.
I took what was about (4) 4 oz pkgs of berries and blended them into a container of All Natural Mountain High Yoghurt (almost NO sugar and completely natural), added a banana for some sweetness and poured them into 3 smaller screw top containers I had in the cabinet, I popped them in the freezer and oh my are they good!!
I don’t know why but I am impressed with how good they are. The yogurt makes them really creamy and the fruit makes it seem like sorbet. It’s totally a dessert!
I would only recommend using full fat or lowfat yogurt as the non-fat type tends to not set/freeze as well when you do things like this.
So here is the recipe (it yielded about 28 oz of frozen yumminess – I ate some before it made it to the freezer so I’m guessing)
Frozen Yogurt Treats (adpated from Dr. Sears)
– (1) 24 oz container of Low-Fat Mountain High Yoghurt (all natural vanilla flavor), or another all natural, low-sugar yogurt
– apx 12 oz of fresh berries (less would work just as well)
– 1 whole banana for sweetness (or more to taste)
Blend until smooth, pour into 6 oz freezer safe container(s)
let set for 3-4 hours (longer for larger size containers)
