Today we are going to focus on stocking our freezer. This holiday season let’s spend time with our family and friends and NOT in the kitchen! I have a family tradition of serving muffins on Christmas morning. Last year I remembered the muffins on Christmas Eve! Not wanting to break tradition, I spent my Christmas Eve in the kitchen making muffins. This year I am determined to be prepared.
The first thing we need to do is to review our lists and holiday calendar we created and determine which events require food items. Start making a list of all of the items you can prepare in advance and freeze. Do you need to bring side dishes for parties, dinners or pot lucks? Side dishes can often be prepared and frozen for later. Simply thaw out prior to your event, bake and you are all set with minimal time in the kitchen.
What do you traditionally bake each holiday? Be sure to include family traditions such as cookies for Santa or a special Christmas morning treat. Also, include all of the food items you give as gifts. Do you typically give plates of cookies for the neighbors or breads for co-workers? Cookies, candies, cinnamon rolls and breads can all be baked and frozen for later. You may also want to include easy meals to store in the freezer for busy nights or last minute guests.
Next, list out all of the ingredients required for your cooking list. Do not forget to list out the storage containers you will need. Now, add your cooking day to your holiday calendar.
Stay organized and efficient on cooking day by setting up stations around your kitchen. For easy clean up, have a sink of water ready to wash dishes as you go or ensure the dishwasher is empty and ready to be filled. A chopping station should include cutting boards, knives and containers for the chopped items. A mixing station should include your blender, mixer, whisks, spatulas and bowls. Include skillets, pots and utensils by the stove for easy access. Place your food processor, shredder or grinder together for processing items. Be sure to include a station for assembly. Leave plenty of space and have your containers ready to go. You should also be certain to have an empty trash can accessible and have an ample supply of towels on hand.
When storing, make sure you clearly label and date all items. You will want to ensure you seal properly for air tight storage. Another helpful tip is to have a list on the outside of your freezer of all items. Cross off as you use items throughout the holiday season.
