I love lasagna, but with only my son and I, a 13×9 is way too much and wasteful if you don’t eat it all. Last year I was having surgery and was looking for meals for the freezer. Instead of a 9×13, we used three 9×5 bread loaf pans and made the layers as usual. We lined the loaf pans with heavy duty foil and wrapped tightly. Once frozen, we removed the pans. When cooked, half of each ‘loaf’ was enough for one person, with a vegetable/salad side.

Question: Do you cook them all first then freeze or assemble and cook after frozen? How long and what temp do you cook? Thanks!

We froze them before cooking. Added a little more Mozzarella on ton (we love cheese) and cooked for about 20-30 minutes, or until bubbly and cheese had browned.
