When I make any kind of soup I always double (or more) the recipe. That way I always have a “pot” ready to go in the freezer for those days we are behind or I get sick and my husband can’t help out with the cooking. It takes no time at all to thaw frozen soup and very little to warm it up for a meal. I always keep some good rolls in the freezer to go with the soup. It makes for a quick and simple meal, and when you are feeding 3 men all over 6 feet who are big eaters, that helps!!
