One way I save some money and make dinner more exciting is combining some canned fruit (stockpiled for pennies) with any fresh fruit left at the end of the week. It makes a big bowl of “fruit salad” and is great side dish to any main course. The kids always perk up a little when I mention fruit salad as part of the dinner menu.
