In a previous post I mentioned that we were having a birthday party for our 1 year old. We had 18 people attend – 4 small kids and 14 adults. I am lucky because he is a Labor Day baby so I took advantage of all of the great deals on hamburgers, hotdogs, condiments, etc. the week leading up to his birthday. (It pays to know your sale cycles!)
We grilled hamburgers and hotdogs with all the fixins’, had pasta salad, potato chips, baked beans, and cupcakes with ice cream. All together I spent $65 on food and drinks. Not to shabby – $3.61 per person with lots of left overs.
This is my favorite way to make baked beans. Sure they taste OK out of the can but adding just a few extra things can make them extraordinary!
Ingredients
- *2 28 ounce cans of baked beans. Choose the flavor you like. I use Homestyle.
- *5 strips of bacon, cooked and chopped.
- *1/2 medium onion, diced and sauteed.
- *1/2 cup brown sugar - add more if you like after all of the other ingredients are added.
- *1 bay leaf, crushed
- *1 tablespoon of mustard
- *1 tablespoon of ketchup
Instructions
- Mix together all ingredients.
- Bake at 350 for 45 minutes or until bubbly.
- This can be mixed up 24 hours prior to baking. Just cover with plastic wrap and put it in the refrigerator.
- This recipe is for 6-8 servings.
