Christmas morning can be hectic! Between kids opening presents and family coming over the last thing you want to be is chained to the kitchen.
Here is a Christmas brunch plan that will keep you out of the kitchen and get rave reviews with minimal work.
The night before put together the Christmas brunch casserole (recipe to follow) and cut up fruit (strawberries, melons, blueberries, kiwi – whatever is in season) or chill a few cans of fruit cocktail (that’s my plan!).
About an hour before brunch put the casserole in the oven. Serve with store bought muffins or cinnamon rolls and chilled fruit and viola! A quick, easy and delicious Christmas (or any special occasion) brunch!
Christmas Brunch Casserole
- 6 cups of French bread (usually 1 loaf)
- 1 pound of sausage cooked and drained (if you want the really easy way – buy the precooked crumbles)
- 2 cups shredded sharp cheddar (pre-shredded is fine)
- 2 green onions chopped
- 1 quart half and half
- 9 large eggs
- 1 teaspoon salt
- 1 teaspoon dry mustard (or a squirt of the real thing if you don’t have dry mustard)
- Pepper to taste
Directions
- Grease a 13X9 casserole dish with butter.
- Spread the bread evenly.
- Top with, in order, sausage, cheese, and onions.
- Mix together half and half, eggs, mustard, salt and pepper. Pour over bread, sausage and cheese.
- Cover with foil and let sit in the refrigerator overnight.
- Preheat oven to 350 and cook for about 45 minutes or until eggs are firm. Serves 8-10.
