So – many of you have read or heard that Evan is on a gluten-free, lactose-free, soy-free diet for the time being. You would think since that rules out most prepared foods, my budget should be getting smaller right? Not so….
I am trying to be creative and try many homemade gluten-free recipes but it’s truly like learning to cook and bake all over again. This week we wanted to have veggie tuna casserole…rice is good, veggies and shredded cheese are good, tuna is fine as well but, cream of chicken soup – BAD BAD BAD! So, I made my own cream of chicken soup with chicken stock (organic, all natural because, believe it or not some have wheat in them!), rice milk and cornstarch with some salt added. It wasn’t bad and he ate it so, score one for me! But, look at the ingredients, I think that may cost more than buying a can – on sale of course!
At any rate…my budget has been struggling the past two weeks. I want to try to keep it at $50 but I may have to raise it, we’ll see.
So – that’s my double challenge! Interesting food with NOTHING in it and a $50 a week grocery budget!
